As the summer months grow hotter, I use my oven as little as possible for fear of my house becoming more blistering than I can bear. However, I still want to eat healthy, quick, protein-packed meals. So I created a spin on my traditional salad.
Early in the day, while it was still cool, I baked up some chicken with some chicken broth and a little pepper. I let that cool, shredded it, and stored it in the refrigerator where it would keep for a few days. (You could also freeze it so it would keep longer.)
I shredded some fresh green leaf lettuce, topped it with the shredded chicken, added some sliced stawberries, sliced almonds, and feta cheese. I used some E.V.O.O. flavored with lemon and herbs as a dash of dressing. It's super simple and refreshing for those hot days!
Summer Strawberry Chicken Salad
2 Cup Green Leaf Lettuce (or other greens of your choosing)
6 Ounces Cooked (or grilled) Chicken
3 to 4 Fresh Strawberries
2 Tablespoons Sliced Almonds
Sprinkle of Feta Cheese
Drizzle of EVOO (Extra Virgin Olive Oil)
Salt and Pepper to Taste
Mix all together and enjoy!
Makes 1 serving.
Note: It's really quick to make!
