Winter is here!! And along with dropping temps, white stuff falling from the sky, and chestnuts roasting on an open fire, it means even more feasts and treats are just around the corner. Many of us will give ourselves a “hall pass” around the holidays to mindlessly indulge, and while I totally agree that we do need a break now and then from the dialed-in eating plan we maintain during race season, we also should be able to enjoy our holiday favorites AND be able fit into our kits for the first race of the new year.
The only thing I love more than festive flavors and sweater weather is experimenting with foods to make the good stuff ALSO be health(ier) so that we can enjoy every bite and FEEL GREAT when we’re done, too! This recipe is the perfect sweet treat to have around the house or bring to that office party or family potluck... Or even grab-and-go before that winter long run or trainer ride!!
GF/VEGAN PUMPKIN OATMEAL COOKIES
2c gluten free oats
1c pumpkin purée
1/4c coconut sugar
1/4c unsweetened applesauce
1 handful dried cranberries
1 (big) handful dark chocolate chips
1-2tsp pumpkin pie spice // cinnamon + nutmeg
INSTRUCTIONS
Preheat oven to 350*
Combine all ingredients in medium mixing bowl (( stir in cranberries and chocolate chips last )) until doughy
Place approximately 1tbs sized scoops onto a greased baking sheet
Flatten into a cookie shape, as these will not expand when baked
Bake for 15 minutes or more if you prefer your cookies well-done
