Fall has arrived - at least that’s what the calendar says. The days are a bit cooler, even here in northwest Florida. I do love a good soup, stoup or stew, regardless of the time of year. I’m always on the lookout for a great beef stew recipe, especially after I saw a beef stew kit while doing my grocery shopping.
I have the additional challenge of making it gluten-free as I have a celiac family member. I found a fabulous beef stew recipe here: through a site called Chowhound. It was easy enough to make gluten-free by substituting gluten-free flour for the regular flour listed in the recipe. Make sure you have a BIG pot to cook this in as it does make a lot of stew!
I paired the stew with some Golden Vanilla Cornbread from the Hawaiian Vanilla Company (in case you’re missing The Big Island this time of year!). This is a delicious feast - rich in flavor and there are no shortages of calories to fuel you after a tough training day! Happy eating!
