'Go Ahead and Eat Another’ Oatmeal Banana Chocolate Chip Protein Cookies

We are currently staying at my mother’s house, and she loves to show affection through baking for us. I particularly am a fan of her chocolate chip cookies. So, I needed to find a recipe for chocolate chip cookies that is good for me and will help me get the energy I need to get out on my training ride.


I found the recipe for ‘Go Ahead and Eat Another’ Oatmeal Banana Chocolate Chip Protein Cookies, and made this hoping it would be good. Needless to say, they were - I’m glad I promised some to my husband and mother, otherwise I would’ve eaten them all! Here's the recipe:


Ingredients

  • 2 ripe bananas, mashed until smooth and creamy

  • 1/3 cup peanut butter (creamy or chunky--you choose!)

  • 2/3 cup unsweetened applesauce

  • 1 scoop vanilla protein powder (you can leave this out of the recipe, the cookies just won't have as much protein)

  • 1 tsp vanilla extract

  • 1 tsp butter flavor extract (optional)

  • 1 1/2 cups uncooked quick oatmeal (or use old fashioned oats for a different texture)

  • 1/4 cup chopped nuts (your favorite)

  • 1/4 cup carob or chocolate chips (optional)

Directions

Preheat the oven to 350 degrees.

Smash the two ripe bananas until smooth and not lumpy. (If you're harboring any anger or frustration, it might be a good time to take it out on those bananas!)

Add the peanut butter and combine well.

Add the applesauce, protein powder, and extracts and mix well.

At this point, it really doesn't look appealing, but don't let it fool you!

Mix in the oatmeal, nuts, and chocolate chips, and let the batter rest for 10 minutes.

Drop the batter onto a parchment-lined baking sheet.

Bake for 25 min.

Let cool and enjoy!

This recipe makes about 8 large cookies or 7 jumbo cookies.
